So for this week I have decided to make potato and spinach gnocchi. It seemed easy enough. Actually it was easy enough. The entire cooking time was less than 1 hour. I guess I was lucky enough to get my hands on a pretty good recipe. Below is the recipe:
2 cups All Purpose Flour
1 Teaspoon Salt
1 Tbsp margarine
Half cup spinach
2 Potatoes
Marinara Sauce
Half cup Mozarella Cheese
Boiling the potatoes took about 10 minutes. I mixed the potatoes, flour, salt, margarine and spinach into a mixing bowl and cut the dough into small round balls with a hole in it. I let them chill for half an hour in the refrigerator and then boiled them in salted water for 5 minutes - until they rose to top. Once they were done, I served them on a plate with marinara saue and mozarella cheese. For the cheese to melt, I heated the gnocchi in the microwave for a minute. Served with a bit of parmesan cheese on top. Easy!
This is a recipe I will definetely be making again. I ask for a real challenge. :)
